Chef Kevin Smith of 41Hundred Wins Cooking For A Classic 2020

March 17, 2020

Chef Kevin Smith of 41Hundred in Raleigh, NC wins the fourth annual Cooking for a Classic tournament after 3 intense rounds of competition and outlasting 7 other chefs to claim the top prize: a 2002 Chevrolet Corvette Convertible. Cooking for a Classic’s head-to-head showdowns raised money for the Lucy Daniels Center where 100 percent of the proceeds were donated.

At last night's grand finale, March 11, Chef Smith and Chef Kyle Fletcher of Wye Hill in Raleigh, NC worked with their teams to each create an appetizer, entrée and dessert incorporating at least one of the day’s secret ingredients: Seven Springs Pork Shank, Norm’s Farms Elderberry Jam, Elderberry Extract & Elderberry Flowers, Burwell Farms Bianchetto Truffle, and the curve ball ingredient, assorted citrus Jello. Chef Smith’s courses that brought him home the win included:

Appetizer: Three Cheese Ravioli - Burwell Farms white truffle-parsnip puree, pomodoro, basil oil, micro salad

Entrée: Norm’s Farms Elderberry Braised Severn Springs Pork Shank - Burwell Farms white truffle polenta cake, maque choux, Norm’s Farms elderberry jus

Dessert: Buttermilk Chocolate Cake - Italian meringue, Norm’s Farms elderberry panna cotta, citrus Jello gelee, chocolate mousse, macerated strawberry

Each round of competition was held at 1705 Prime, Rocky Top Catering’s premier event venue in Raleigh. Each guest blindly voted on their favorite dish per course without knowing which chef created which one. Thanks to generous donations from sponsors, the event was a huge success. Event sponsors for Cooking for a Classic 2020 include US Foods, Rocky Top Catering, and Overflowing Hands.
